Ingredients

  • 2 Pounds ground beef
  • 1 Cup onion diced
  • 1 green pepper diced
  • 1 yellow pepper diced
  • 1 or 2 jalapenos seeded and diced
  • 1 Tablespoon garlic minced
  • 28 Ounces fire-roasted tomatoes canned
  • 2 Cups beef broth
  • 6 Ounces tomato paste
  • 2 Tablespoons cornmeal
  • 2 Tablespoons chili powder
  • 1 Tablespoon cumin
  • 1 Teaspoon dried oregano
  • 1 Teaspoon salt
  • 1 Teaspoon black pepper

Toppings:

  • sour cream
  • shredded cheddar cheese
  • diced onion
  • cilantro
  • lime wedges
  • tortilla chips

Instructions

  • In a large, deep pan, cook the beef until no longer pink, then add the onion, peppers and garlic and cook for another 3 to 4 minutes.

  • Add the tomatoes, broth and paste and stir in well, then sprinkle on the cornmeal and spices.

  • Bring to a simmer and cook for 20 to 30 minutes.
